Balsamic Bruschetta

Always a party favorite!  


Combine the following in a bowl and refrigerate for a few hours before serving for all the flavors to mix together!


8 tomatoes, diced  (I like to squeeze most of the seeds out)
fresh basil
1/4 cup (or a bit more!) Parmesan cheese
2 cloves, minced
1-2 tbsp balsamic vinegar
2 tsp EEOV
salt and pepper
